Dry noodles made using carefully selected wheat and traditional processing techniques. Rinsing it with cold water after boiling will give it the chewy texture unique to sanuki udon.

■How to serve: (1)Prepare the dipping sauce and spices beforehand. (2)Put 2L of water in a deep pot. Drop the noodles when the water comes to boil. (3)Boil the noodles for about 4 minutes, watching the fire so that the water doesn’t overflow. Adjust the boiling time so that the softness meets your preference. (4)Pour into a colander to drain the water. Quickly rinse with cold water or iced water.
